I've ordered a Samsung Galaxy S7

if I transfer the APPLE SIM (Nano) into the Samsung; will I retain my old number 075**********

As long as it’s of a size that’ll fit into your replacement phone it’ll work fine. Apple don’t supply your sim,Three do so all will be (hopefully) good. You should have no problems.
