When I reboot the hub and Eero router I get speeds of 400+mb/s, however after a day or so speeds settle at around 100mb/s, I reboot the hub and router and speeds go up to 400+mb/s - why does this happen?

I have seen similar results, a few very high speed tests after a reboot followed by lower results, while I had a period of very low results that seems to have been resolved by installing the hub on an aerial pole.
As long as the minimum doesn't drop too low and the average is near the advertised 150Mbs there isn't anything to worry about - It might be nice to have 400+ but it is much better to have a more consistent speed.

It's not entirely clear what would be causing that. It could be Wifi related, are you able to connect a device to the Eero to test its speed over ethernet? If so, you could wait until the next time it slows down, and run a test with a device plugged in as well.
