It's stated that data packs have certain amounts of data that can be used in 71 GoRoam destinations.
First: what are these 71 destinations?
Second: How does calls&texts work in those destinations? Charged from credit, or covered in the pack? If covered, where can i call when roaming in these 71 destinations? Only the UK or among these destinations or all around the world?

Great questions, you can check out the rates and inclusions on our Roaming destination checker here.
For the 2nd part of your question, it does vary depending on whether you're in a Go Roam in Europe, or a Go Roam Around the World detination. For the Europe tier, you can use inclusive minutes and texts to dial local numbers where you're visiting, but in Around the World inclusive allowances are for dialling back to the UK only. The checker I've shared gives a full list of rates for any usage outside of allowance.
