Why is it my wife, on Vodafone, can walk into a store and take out a new contract and staff will transfer all her apps, documents, photos etc and her phone number onto her new phone contract but apparently on three this is impossible.
I have been with three many years and find the whole time when my existing contract ends very frustrating. Every year they tell me the only way to do it is to move my number to a different network as PAYG, take out a new contract with three and then transfer the number back onto the three network.
Why can other networks do the transfer in a matter of minutes but with three this is impossible?

Sorry to hear about this, that's really odd. If you're renewing in a Three store, our website, or sales line, you should be able to renew by upgrading rather than taking another line, so we'd normally set up your new plan on the same phone number.
