ATW dates for purchase

If I need to purchase a ATW 5 day pass to use in the USA do I need to purchase it on the day I want it to start or can I purchase it now, which is a week before I fly?

You can purchase it in advance of traveling, it won't actually kick in until you start roaming.

Buying the bundle is the cheapest way to unlock allowances for roaming. However, if you only plan to use data, and have no intention of using texts or minutes, the Data Passport is a good alternative. It offers unlimited data for 24 hours. It also costs £5 for each one.
