Does the pay as you go sim/esim have an expiry date? Which means if I haven’t topped up or used my credit it will expire in a certain period?

If you haven't used a chargeable event or service on the SIM in 180 days, the account would close. That could be sending a text, using 1MB+ of data, make a call, or top up the line.

I just activated it and it has no balance in it yet. Does it have a initial 180 day validity or I need to top up.

You'll have 180 days from activation as well, there's no need to top up right away.
