First few things I did when I got my S20+. Changed the keyboard to Gboard as it is much nice to type on, turned off 3 finger navigation (swipe up to go home navigation) and then turned on WiFi call and VoLTE.

GBoard is a great choice as is another called Swiftkey which is also free and has lots of themes.
If new to Android you can always check out the Play Store for the most popular apps right now and see if any take your fancy
