I own a Samsung mobile (SMG950F) and subscribe to a pay monthly SIM which currently has 6 months to run until the end of my contract. I am going to buy a new Samsung phone, can I transfer my existing 3 number and SIM contract over to a new phone? If so how do I do this?
Also how do I get the SIM out of my current phone?

It's really difficult but try taking the sim out of the old phone and putting it in the new one, always works for me.

That's right, as long as the new phone is unlocked, it's just a case of physically swapping the existing SIM into it. All Three supplied phones are unlocked, but if you're purchasing elsewhere just make sure to check this.
If you're struggling to figure out how to remove the SIM, it looks like the user manuals are available to download from Samsung.
