eSim & SMS Messages

I have recently moved my number from physical to eSim, all with Three.

Since the move to eSim, I have not been able to send SMS messages to people 

Is there something I've overlooked? A setting maybe?

The setting that provision text should all be automatic. Sorry if you've tried this already but can you check if a reboot, or toggling airplane/flight mode on and off again sorts it?

Depending on your phone, it's also worth checking your message settings, and toggling iMessage/Chat/RCS messaging off. In case the phone is trying to send these over data instead of text and failing. In most cases you can switch the feature straight back on again, and it'll sync back up with your SIM, but I'd test with and without these features just in case it makes a difference.
