In Spain for a few weeks and have mobile data switched off, using property WiFi only. However still getting text from 3 saying they are charging me £2 daily?

Ah, that's not great if you're not planning to use any services. It's worth noting that data isn't the only thing that would trigger the charge, calls or texts would do it too. If you want to avoid being charge, I'd recommend using flight mode/airplane mode, or heading into the Three app and setting your spend limit to 0 temporarily.
